Moving To The Country
Using the Peach Aperitif I made in my last blog post I wanted to create a nice simple drink that highlighted and enhanced the summery peach flavours.
This simple 3 ingredient recipe is endlessly interchangeable and can suit so many different ingredients.
50ml Spirit*
25ml Peach Aperitif
100ml Ginger Ale
Mix all ingredients in a wine glass or highball over large cubes of ice. Garnish with an orange zest or sprig of mint if you have it on hand.
* I used Irish Whiskey for this drink — specifically a 12 year old, Sherry Cask finish from Gelston’s for its dried fruit and nutty notes.
Bourbon or Rye also works really nicely in this drink, but feel free to experiment with your favourite spirit. Juniper would be a lovely addition so feel free to chuck gin at it. If you want to keep the ABV a little lower and add some big nuttiness to it, use something like a Palo Cortado sherry.
